Paolo Manzone is the sixth generation of his family involved in the wine industry. Paolo’s father and grandfather were well-known farmers and grape-growers before they started making wine in 1970. Paolo is the winemaker and vineyard manager for the 24 acres of vines the family owns in the two villages of Sinio and Serralunga d’Alba, in the heart of the legendary Piemonte region. The age of the vineyards in Sinio on average are 20-25 years, while vines in Serralunga range from 25-60 years. With the continued support of his wife and family, Paolo carries on the family tradition.

GRAPE VARIETY: Nebbiolo Barbera and Dolcetto blend.

VINIFICATION: the grapes, harvested by hand, are removed from the stalks and lightly pressed. Then the grapes are put in modern vertical stainless steel tanks, with automatic rising, where the fermentation temperature in continuously kept under control at 25/27 degrees Celsius. The skins are macerated for one week. During the month of November, after the vinification, a part of the wine will stay in french tonneaux of 350 litres to obtain big structure and softness and the other part of the wine will stay in stainless steel tanks. During the following year, the two wines will be blended and bottled.

ALCOHOL DEGREE: 14,50% vol
